Eggplant Yogurt Arabic Recipe

When I was living in Arabic, there is a famous dish is the Eggplant Yogurt Dip recipe. Arab, Turkey, and Lebanese use eggplant are very popular dishes. Different methods to make eggplant recipes. In this recipe, I will tell you how to make an eggplant yogurt dip.

Lebanese Stuffed Eggplant Recipe

INGREDIENTS

  • 2 medium eggplant cut into half-inch thick
  • 1 cup thick yogurt
  • 1 tsp red chili powder
  • 5 dry red chilis
  • 4 cloves garlic sliced
  • 1 tsp mustard seeds
  • 1 small onion sliced
  • 1 tsp whole cumin seeds
  • 1/2 cup oil
  • 1 tsp salt to taste

INSTRUCTIONS

  • In a grilled pan add 4 tbsp oil. Once oil hot add one by one sliced eggplant ( no overlaps )
  • One side golden crispy turn over the other side. And both side golden color, take it out all on a plate.
  • In a 1 cup yogurt bowl add 1/2 tsp chili powder, and salt to taste. Mix well smooth paste. Keep it aside.

FOR TARKA RECIPE

In a pan add half a cup of oil. once oil hot add sliced onion, sliced garlic, dry red chilis, dry cumin seeds, mustard fry until golden brown.

For Assembling 

  • In a large dish add the first layer of fried eggplants, On top of yogurt sauce, spread equally.
  • At last on top fried Tarka.
